The Traditional Process

Stage 01

The Harvest

Walk through the steep hillside gardens where the air feels cool and fresh. If you visit during the season, you do not just watch: you help hand-pick the ripe red cherries, learning to select only the best beans.

Pulp & Dry

See how we wash the beans to remove the pulp and then spread them on open trestles. We sun-dry the beans in the pure mountain air, allowing them to slowly develop their rich flavor profile.

The Roast

This marks the best part. You roast the green beans yourself over an open fire using a traditional clay pot. As the beans darken and crackle, the aroma fills the air, and it is incredible.

Grind & Taste

Using a wooden mortar and pestle, we grind the beans by hand. Then, we brew the grounds to serve you the freshest cup of coffee you will ever experience, right there in the garden.
